Ingredients:
- 300g margarine (dehydrated)
- 2 eggs
- 1 tbsp instant dry yeast
- 25g granulated sugar
- 12g salt
- 12g mahaleb (optional, for flavour)
- 17g vegetable oil
- 450g all-purpose flour
- Sesame seeds
- Pekmez (grape molasses) for coating (optional)
Instructions:
Prepare the dough:
- Melt and freeze the margarine, then discard the liquid.
- Combine the margarine, eggs, yeast, sugar, salt, mahaleb, and vegetable oil in a large bowl.
- Gradually add the flour, kneading until a firm dough forms.
- Cover the dough with plastic wrap and let it rise for about an hour.
Shape the simidi:
- Punch down the dough and divide it into equal-sized pieces.
- Roll each piece into a long rope and form it into a ring shape.
- If desired, dip the rings in a mixture of pekmez and water before coating them with sesame seeds.
Bake:
- Preheat oven to 180°C (350°F).
- Place the simidi rings on a baking sheet lined with parchment paper.
- Bake for about 15 minutes or until golden brown.
Cool and serve:
Let the simidi cool completely before serving.
